As the CEO and VP of Cascade Peak Spirits/Organic Nation, David and I notice that people are always curious as to what prompted us to go into the unique business of Distilling. But what is of more importance to us, is WHY? Why we do what we do? Why did we choose to distill Organic spirits?

Well, it isn’t that we thought that we would be creating some kind of a health product, that organic vodka would be good for you. Inherent with the consumption of alcohol, can be impaired health if one is not mindful of how they consume. One has to watch how much, when, with what, with whom, when they imbibe distilled Spirits (We don’t use the word ‘hard alcohol’ as it is the leftover vestiges of an era that believed and blamed distilled spirits for many of the societal problems of the early 1900’s, removing the consumer from any responsibility and associated consequences).

We chose to ‘Go Organic’ and be certified organic by one of the most rigorous certifiers in the world, Oregon Tilth, because we do not want to participate in the pollution of our earth. So, it isn’t about the organic Spirit, it is about what goes into the spirit. At Organic Nation, we only purchase products that are certified organic. So when we buy the grain, botanicals, and any other ingredient that will go into the spirit, those products themselves are PURE. They have not been sprayed with herbicides, or pesticides and have not been fertilized with chemical fertilizers. These organic products have been grown based on a system of farming that mimics natural ecosystems and maintains and replenishes the fertility and nutrients of the soil and thus does not pollute the air, water or soil.

Organic Certification means that our products have been grown and handled according to strict organic standards that include inspection of farm fields, process facilities, detailed record keeping and periodic testing soils and water to ensure that we, as organic processors, are meeting or exceeding the standards of the USDA National Organic Program (NOP). So, the difference between non-organic or conventional Spirits and organic Spirits is that organic Spirits are made from raw materials, i.e. grains, potatoes, grapes, etc. that are grown without the use of chemicals, herbicides, or pesticides.

So the word ‘Organic’ refers not only to the raw products themselves but more importantly is how they are grown, produced and processed. Bottom line, organic farming does not use chemicals that pollute the environment. And the bottom line for Organic Nation is that we do not participate in polluting the air, water and soil that we Oregonians cherish.
